1. Potato-Onion Kachori

Ingredients

  • Flour – two cups
  • Potato – one boiled
  • onion-two
  • Cumin
  • Souf
  • Coriander,
  • Mangoes Powder
  • Garam masala 1/2 tsp,
  • Salt and red chili
  • As per taste
  • Oil – for frying

How to make Aloo Kachori

Step 1 – First of all, add salt and two tablespoons of oil to the flour and knead it with water. Keep covered for half an hour.

Step 2 – Now heat two teaspoons of oil in a pan, add cumin, fennel, and whole coriander to it. When it crackles, add finely chopped onion to it and make it pink.

Step 3 – Now add boiled and mashed potatoes and all the dry spices and cook for two to three minutes and turn off the gas.

Step 4 – Now make a big dough out of the kneaded flour and roll it a little.

Step 5 – Now fill it with the prepared potato mixture, pack it well and flatten it by pressing it with your hand.

Step 6 – Fry in hot oil on low heat till golden brown.

Step 7 – Now, Potato-Onion Kachori is ready to serve.

2. Jodhpuri Mawa Kachori

Ingredients

  • Flour – two cups,
  • Gram flour – two teaspoons,
  • Mawa – 1 cup
  • Sugar – two cups
  • Cardamom powder – 1 tsp,
  • Saffron – 1 tsp,
  • Almond-Pistachios – 2 tbsp
  • Desi ghee – for moyan and frying.

How to make Jodhpuri mawa kachori

Step 1 – Add one cup of water, a little saffron-cardamom to the sugar and make a sugar syrup.

Step 2 – Now add gram flour and two tablespoons of ghee to the flour, mix well and knead it with water.

Step 3 – Put khoya in the pan and roast it lightly.

Step 4 – Then mix two-three teaspoons of ground sugar, ground cardamom, some saffron, chopped almonds and pistachios and turn off the gas.

Step 5 – Now make a little big ball from the kneaded flour. Fill the khoya mixture in it and pack it. Flatten by pressing with hands.

Step 6 – Put in hot ghee and cook on low flame till it becomes golden.

Step 7 – Put the kachori in sugar syrup for some time and then serve garnished with saffron and almond pistachio.

3. Besan Kachori

Besan kachori

  • Flour – two cups
  • Gram flour – 1 cup
  • Hing – 1/4 tsp
  • Cumin ½ tsp
  • Souf ½ tsp
  • Coriander, half tsp
  • Amchur ½ tsp
  • Garam masala – 1/2 tsp
  • Salt and red chili – as per taste
  • Oil – for moyan and frying

How to make Besan Kachori

Step 1 – Add salt and two tablespoons of oil to the flour.

Step 2 – Knead with water and keep covered for half an hour.

Step 3 – Heat two teaspoons of oil in a pan and add cumin, fennel, and whole coriander. When it crackles, add gram flour and cook on low flame while stirring continuously.

Step 4 – When it becomes lightly golden, mix all the dry spices in it and turn off the gas.

Step 5 – Make small balls from the flour, fill them with the mixture and wrap them in a round shape.

Step 6 – Fry in hot oil on low heat till golden brown. Besan kachori is ready to eat.

 

4. Chinese Kachori

Ingredients

  • Flour – two cups
  • Noodles boiled – 1 cup
  • Onion, one and a half cup
  • Carrot one-and-a-half cup
  • Cabbage, one and a half cups
  • capsicum one-and-a-half cup
  • 1½ cups French beans, thinly sliced
  • Tomato Sauce – 2 teaspoons
  • Chili and soy sauce – 1 tsp each
  • Vinegar – half a teaspoon,
  • Ajinomoto (optional) – a pinch
  • oil-moyn for frying
  • Salt – as per taste

How to make Chinese Kachori

Step 1 – Add salt and two tablespoons of oil to the flour and knead it with water. Heat oil in a pan.

Step 2 – Put thin long cut onions in it and fry it lightly. Add all the finely chopped vegetables, boiled noodles, all three types of sauces, vinegar, salt and Ajinomoto and cook on high flame for 4-5 minutes while stirring continuously.

Step 3 – Cool the noodles.

Step 4 – Make kachori from the stuffing and fry it in hot oil on low flame.

 

5. Moong Kachori

  • Flour – two cups
  • Whole Moong – 1 cup
  • coarsely ground coriander
  • Ajwain – 1 tsp,
  • Chaat masala and garam masala – half teaspoon each,
  • Chopped ginger and green chillies – 1 teaspoon each
  • Salt and red chili – as per taste
  • Oil – for moyan and frying

How to make Moong Dal Kachori

Step 1 – Wash and clean the whole moong and boil it with water and salt till little remains. Separate its water.

Step 2 – Mix half a teaspoon of celery, salt, and two tablespoons of oil in the flour. Knead it with moong water.

Step 3 – Heat two teaspoons of oil in a pan and add celery and coarsely chopped coriander. When it crackles, add boiled moong, chopped green chillies, ginger, chaat masala, garam masala, salt, and red chillies and cook for two to four minutes and cool it.

Step 4 – Make balls out of refined flour and fill them with the mixture and make kachoris, fry on low flame.
