- 2 cups sugar
- 1 tsp cardamom powder
- 2 liters of milk
- 5 tbsp sugar
- 2 cups flour
- juice of 1 lemon
- 2 tbsp ghee
- Some Dry fruits
Ghevar Recipe Step by Step
Step 1. Firstly we will make sugar syrup. For this, we will take a vessel and put 2 cups i.e. 400 grams of sugar in it.
Step 2. Along with sugar, we will put 2 cups of water in it. When the sugar comes to a boil, we will add cardamom powder to it.
Step 3. We have to make the sugar syrup into a string. That’s why when strings start forming in the sugar syrup, we will turn off the gas.
Step 4. Now we will take a pan and put one and a half liters of milk in it and cook the milk till it becomes thick like rabdi.
Step 5. When the milk becomes like rabdi then we will add sugar to it. After mixing the milk very well, we will take it out in a Bowl and keep it cool down.
Step 6. If you do not want to make rabdi at home, then bring mawa and fry it in ghee and then add milk to it and make it thick like rabdi. Rabdi will be ready exactly like the market.
Step 7. Then we will prepare the batter for making Ghevar. For this, we will take a mixer jar and put 2 tbsp ghee in it. Along with ghee, we will put 1 glass of milk in it.
Step 8. Now we will mix ghee and milk well by running the mixer. When the milk and ghee are mixed together, then we will add flour little by little and after adding water little by little, beat the flour well in the mixie. Absolutely cold water has to be used here.
Step 9. Similarly, we will beat all the flour well. The solution has to be kept thin, not too thick. For nice better, you can beat the flour with your hands instead of a mixer.
Step 10. Now we will take out the solution in a vessel and add lemon juice to it and mix it well. Then we will take a pan and put ghee in it.
Step 11. When the ghee is well heated, then we will put 2 spoons of flour solution in it. When the foam stops forming from the flour, then we will put 2 more spoons of flour in it.
Step 12. Along with this, we will set the refined flour in a round shape in the pan. For this, when the added flour gets fried a little, then we will put it on the edge with the help of tongs. And will make a round empty space in the middle, put a little more batter in it, and again take it to the edge.
Step 13. The middle part of the pan should remain empty and the meda has to be set around it in a round shape as in ghevar. If your pan is very big, then put a round mold in the middle of the pan and put ghevar paste inside it. Your ghevar will be made quickly.
Step 14. There is a hole in the center of the ghevar and its shape is round.
Step 15. Similarly, we will put about 9 spoons of flour in a ghevar. Do not allow children to make this recipe at all because when refined flour is added to oil, it splatters far and wide.
Step 16. When the ghevar becomes as thick as the market, then we will stop pouring the batter in it and again make a hole in the middle. We will take out the ghevar from the pan by putting tongs in this hole. When the ghevar is cooked, the ghevar will automatically leave the pan.
Step 17. Similarly, we will make all the ghevar. Now we will sweeten the ghevar by adding it to the sugar syrup.
Step 18. After sweetening the ghevar, we will put the rabdi on the ghevar that we made earlier.
Step 19. Serve the ghevar by putting dry fruits on top of the ghevar.
